Whole Grain Bruschetta with Tomatoes and Basil Recipe


6 slices whole-grain French baguette or whole-grain Italian Bread

1 garlic clove

1 TSBP + 1 tsp olive oil

3 plum/roma tomatoes, chopped

3 fresh basil leaves, chopped

1 tsp balasamic vinegar

¼ cup parmesan cheese

Pinch of each salt & pepper




1.)    Preheat oven to 450˚.
3)     Drizzle slices with 1 TBSP of olive oil.2)    Cut garlic clove in half and rub on each side of slice of bread.

4)      Arrange bread on a baking sheet and bake for 5 minutes or until toasted.

5)      Remove from oven.

6.)    Toss the tomatoes, balsamic vinegar, basil, and remaining olive oil into a bowl.

7.)    Spoon onto slices. Season with salt & pepper. Top with Parmesan cheese.


How to get your kids involved?

-Have them cut the tomatoes and basil (with a plastic knife, under adult supervision)

-Have them pick basil leaves if you have them growing in your own garden

-Have them drizzle the whole grain slices with olive oil and rub with the garlic clove

-Have them add the bruschetta ingredients together and toss

-Have them spoon onto the prepared whole grain slices and top with parmesan cheese
