Try this Delicious & Healthy Sweet Potato Recipe

February is sweet potato month.  Sweet potatoes are a good source of Beta Carotene and vitamins A & C.  They are also high in fiber, but make sure you eat the peel (that’s where the fiber is).


1. 2 large sweet potatoes

2. ¼ cup olive oil

3. 1 T. Brown Sugar (optional)

4. 1 T. Salt (optional)


1.  Cut potatoes (I used a crinkle cutter). Toss in olive oil, brown sugar, and salt

2. Place potatoes on a cookie sheet

3.  Place in preheated oven at 450 degrees

4. Cook for 12 minutes. Turn potatoes over to brown other side. Cook for 5 more minutes

5.  Take out and enjoy
