Gluten-free Dairy-free Crispy Rice Marshmallow TreatsThis is a great recipe I found the from Whole Grain Council. For those of you out there with kids who have gluten or dairy allergies, this is the recipe for you!!! I tried it and it is so good.

Ingredients:

4 tablespoons coconut oil
4 cups mini marshmallows
4 cups crispy brown gluten-free rice cereal

Instructions:

  1. Heat coconut oil in a large saucepan over low heat until just melted.
  2. Add marshmallows and heat very slowly with little stirring, until the marshmallows are almost melded.
  3. Stir gently until the marshmallows resemble marshmallow cream. It should look light & fluffy.
  4. Turn off heat and pour in the cereal. Gently stir to evenly coat the cereal pieces.
  5. Pour into a greased pan and smooth to make level. Cut treats with knife or cookie cutters and let cool.
  6. Store in an airtight container.
